Pumpkin Vanilla Pudding

πŸ§‘‍🍳This super healthy pumpkin pudding makes a delicious anytime snack. It’s also great for refueling after a workout.


You can make up a batch so they are ready to go whenever you need a sweet(ish) treat – top with walnuts just before serving.


Pumpkin-Vanilla Pudding

(serves 1)


  • 6 oz (170 grams) nonfat Greek yogurt

  • β…“ cup (80 grams) 100% pumpkin puree

  • Dash of cinnamon

  • Splash of vanilla

  • 1 tsp maple syrup or honey (to taste)

  • 1 Tbsp toasted chopped walnuts


Combine the yogurt, pumpkin, cinnamon, vanilla, and maple syrup in a small bowl and mix until well combined. Top with the walnuts. πŸ˜‹
